Ingredients:

​

  • 3 cups of almond flour

  • 1 cup caster/superfine sugar

  • 1/8 tsp almond essence to taste

  • 3 eggs whites

  • 1 cup flaked almonds

  • Icing sugar to dust optional

Elaboration:

​

Preheat the oven at 180C. Mix all the ingredients in a bowl with a spatula. Make small balls, sprinkle them with some flakes almonds and place them on a baking tray with parchment paper and place them in the oven for 8-10 minutes or until golden brown. The cookies will be quite fragile as they come out of the oven, so let them cool for about 5 minutes on the baking tray and then transfer onto a wire rack to cool completely.
