CUARTOS CAKE FROM MALLORCA ISLAND
6 whole eggs plus 2 egg yolks
100 gr. Icing sugar
100 gr. Potato starch or corn flour
Separate the egg whites from the yolks. Beat the egg whites until firm and reserve. In another bowl, beat the egg yolks with the sugar until creamy. Add the potato starch and integrate it well. Mix this batter with the egg whites very carefully. Place this mixture in a mold prepared with parchment paper and put it in a preheated oven at 180 degrees C for about 35 minutes. Once cold, garnish with more icing sugar on top. Enjoy it!
