FRENCH MADELEINES WITH LEMON & OLIVE OIL

 

 

Ingredients:

 

  • 3 large eggs

  • 80 gr. sugar

  • 110 ml. Milk

  • 80 gr. Olive oil

  • 170 gr. All-purpose flour

  • 1 teaspoon baking powder

  • 1 pinch of salt

  • Lemon zest

  • Juice of 1 lemon

 

 

 

 

Elaboration:

 

Beat the eggs with the sugar in a bowl until they grow in volume. Add the lemon zest, lemon juice, milk and oil and mix well. Incorporate the flour that we had previously mixed with the salt and the baking powder and mix carefully until everything is well integrated. Cover the bowl with plastic and let it rest in the fridge for at least 1 hour.

Preheat the oven to 200 degrees C. Fill the mold to about ¾ parts of its capacity with the batter of the Madeleines and bake for about 15 minutes. Enjoy!
