FRIED ANCHOVIES

Ingredients:

1 kg. fresh anchovies

Extra virgin olive oil
-
Flour
-
Salt

Elaboration :
​
First of all, remove the head and guts from the anchovies. Clean them
under the tap and let them drain well. Sprinkle with salt and coat them
with some flour. Shake well before frying so that the excess flour is
removed. In the pan, add two spoons of olive oil so that it covers half
of the anchovies more or less. The time will depend on the size of the
anchovy. Place them over some kitchen paper to remove the excess
of oil and serve them immediately. Enjoy them!
