GRILLED MACKERELS WITH PARSLEY & GARLIC

1 Kg fresh Mackerels

2-3 cloves of garlic

1 brunch fresh parsley

Juice of a lemon

Extra Virgin Olive Oil

Elaboration:
Clean the mackerels, remove the head, open them like a book and remove the central fish bone. Peel and cut in a very small pieces 2 or 3 cloves of garlic. In a morter, crush together the garlic, a bunch of parsley chopped, some olive oil and salt. Heat a cast iron griddle pan over a medium-high heat. Cook the fish fillets in batches for 2-3 minutes on each side. Cook the skin-side first and take care when turning to ensure that the skin is released from the pan and does not stick. Transfer the mackerels to a nice serving dish and serve sprinkled with chopped parsley and some wedges of lemon to squeeze over.
