Ingredients:

​

  • 1 puff pastry sheet (homemade or purchased)

  • 1-2 zucchini

  • 1 onion

  • 1 leek

  • 200 gr. Smoked salmon

  • 3 eggs

  • 200 ml. Cooking  cream or milk (can be vegetable)

  • Grated Emmental cheese

  • Olive oil

  • Butter

  • Salt and pepper to taste.

Elaboration:

 

Preheat the oven to 200 C. Cut the smoked salmon into thin strips and set aside. Wash the zucchini and cut into small cubes. Wash, peel and cut the leek and onion and cut into zucchini-like pieces as well. In a pan put a little oil and butter and fry the vegetables, adding salt and pepper to taste, until they are soft and light golden in color. Remove excess fat from vegetables and set aside.

Prepare the quiche mold with baking paper in the bottom. Place the puff pastry in the mold without stretching, adjust  the dough on the sides of the mold  and cut the excess. Place the mixture of the vegetables that we have reserved on top of the puff pastry, distributing them well. Add the smoked salmon strips on top.

In a separate bowl, beat the eggs well with the chosen dairy, seasoning the mixture to taste. Add a little grated emmental cheese and distribute that mixture over the vegetables and salmon.

Bake for about 45 minutes or until the puff pastry is golden.

 

Presentation:

 

Serve the quiche warm with a nice fresh salad. It will give you a healthy and a light lunch or dinner. Enjoy it!
