  • 1-2 Zucchini

  • 1 onion

  • 3 eggs

  • 75 gr. All-purpose flour

  • 50 gr. Grated cheese (emmental, gouda)

  • 50 ml. Milk or any vegetal milk

  • 1 teaspoon baking powder

  • 1teaspoon dried oregano

  • Extra virgin olive oil

  • Salt & pepper to taste








Preheat the oven to 180 °C. 

Cut the zucchini into small pieces. Cut the onion into julienne strips and fry in a frying pan with a little oil together with the zucchini until both are soft. Season with salt and pepper and oregano. Let them cool down and reserve.

In a large mixing bowl, combine the flour, baking powder, salt, pepper and set aside.

Whisk the milk and egg together. Add the wet ingredients to the dry ingredients and whisk until just incorporated. Stir in the zucchini, the onion and the cheddar cheese with a wooden spoon until evenly dispersed.

Prepare the muffin tin with some oil, spoon the batter into the prepared muffin tin and bake for 25-30 minutes or until the tops are just golden and a skewer inserted in the center comes out clean.Allow the zucchini muffins to cool in  pan for at least 10 minutes before removing. Enjoy them!!
